Authenticité et Passion dans la Terre du Vin

Il existe un lieu spécial, niché entre deux bois, où le temps semble s'être arrêté : un vieux vignoble de plus de 70 ans, avec peu de rendement mais une âme profonde. C'est là que mon rêve a pris vie. J'ai choisi dès le début de suivre une voie différente : pas de raccourcis, aucune intervention invasive. Mon raisin doit avant tout être vivant, sain, vrai. Un fruit que l'on peut manger... et ensuite boire, avec respect.

La Méthode Piercarlo : Soin Artisanal en Cave

Dans mon travail, il n'y a pas de précipitation. Je sélectionne les grappes plusieurs fois, à la main, ne cherchant que l'excellence. Et dans le blanc, où les peaux sont souvent immédiatement écartées, j'y vois une opportunité. J'aime les macérations légères, élégantes, capables de restituer le caractère authentique de mes raisins. Je m'inspire des grands : Gravner, Foradori, des vignerons courageux du Carso. J'observe, j'étudie, j'expérimente. Après des années d'essais, mes deux vins sont ainsi nés.

Du XIXe siècle à aujourd'hui : Le Cœur Ancien de ma Production.

Je me suis engagé à prendre soin d'un vignoble dont l'histoire plonge ses racines au début du XIXe siècle, un véritable héritage de mon arrière-grand-père. Nos trois hectares, situés entre Colognola ai Colli et Barco, reposent sur un précieux sol calcaire. Le cœur battant de ma production est constitué de pergolas septuagénaires, capables de me donner des raisins à la structure complexe et élégante.

Ma viticulture est courageuse et, surtout, respectueuse. J'ai banni le désherbage et refusé catégoriquement les herbicides, choisissant une gestion qui utilise des composés naturels à base d'huiles essentielles et de plantes médicinales. Je soigne la terre avec une rigueur patiente, convaincu que seul cet approche permet à mes vins d'être l'expression la plus authentique et vraie de notre terroir.
